Gooey, delicious vegan cacao & raspberry brownies. These brownies are a real treat, great if your having friends over or for your cheat days! We recently made these for Vegan Life Life at London’s Alexandra Palace. The brownies were a sell out & as promised to our fellow Vegan Life attendees, we’ve got the recipe here for you to make your very own.

- 2 x cups flour
- 1 x cup water
- 1 x cup brown sugar
- 1 x cup Pink Tea
- 1 x teaspoon vanilla
- 1 x teaspoon salt
- 3⁄4 cup cacao powder
- 1⁄2 block of vegan butter
- 1⁄2 teaspoon baking powder
- 1⁄2 cup raspberries
- 1⁄2 cup chocolate chips (optional)
Preheat your oven 180ºC.
In a pan add 1 cup water & 1 cup of the flour over a low heat, stirring constantly, until it reaches the consistency of a gluey paste.
Remove from the heat and let the paste cool completely.
Mix in a bowl the brown sugar, Pink Tea, salt, vanilla, cacao powder and butter, and then add the flour-water mixture.
Add the remaining 1 cup of flour, baking powder & a 1/4 of a cup of raspberries.
Spread mixture into a greased 11 x 7-inch pan.
With the remaining raspberries push into the top of the mixture for the finishing touch!
Bake at 180ºC for 25 minutes, or until knife inserted into center of pan comes out clean.
